Chicken & Leek Mash Topped Phie Preparation 25 mins Cooks in 25 mins Serves 4 You Will Need - 750g potatoes, peeled and cubed. - 1 tbsp vegetable oil. - 3 large chicken breasts, cubed. - 2 leeks, sliced. - 295g can Batchelors Cream of Chicken Condensed Soup. - 4 tbsp milk. - 25g butter. - 75g mature cheddar cheese, grated. How to Make It 1 Preheat oven to 200°C, Fan 180°C Gas 6. 2 Boil potatoes until soft. 3 Stir-fry chicken until almost cooked. Add leeks and continue cooking until just soft. 4 Stir in soup and milk, mix well and pour into a 1 litre ovenproof dish. 5 Mash the potatoes with the butter and cheese. 6 Roughly spread over the chicken and cook for 25 minutes or until golden brown.
